Pork chops with Lemon

Ingredients

  • 4 Pork loin chops
  • 1 lemon

Preheat an ovenproof griddle pan. Preheat the oven to 200 degrees C. Heat an oven tray

Oil and Season each chop on both sides and put on the griddle pan, seal on each side until you get nice brown lines on the flesh.

Cut the lemon in half.  Put the chops in the oven tray, squeeze over the lemon juice and place the squeezed lemon halves in the tray.

Roast in the oven for 10 mins. Press the lemon halves on to the chops and baste with lemon juice. Roast for another 10 mins or until firm to the touch.

Method

I went away with the Remaining Offspring at Half Term. We went skiiing in La Plagne and met up with the Eldest who, as I think I have mentioned, is doing a Season out there. She is having a whale of a time it seems, and it was great to meet up with her. We went with a bunch of friends and the Next Doors. It was fantastic, had some interesting food if nothing exceptional, and had a Really Good Time. The weather was amazing, bright blue skies the whole week and being up int he mountains was life-affirming.

Eventually we had to come back, and school starts again, drudge, drudge. However, it is starting to feel decidedly spring like on our return, and that makes me anticipate being able to cook outside again in the wood oven once the weather is warm enough. In anticipation of that, I had ordered a copy of Anna Del Conte's "Gastronomy of Italy" before I left, and it finally arrived. So I started to read it - and I am sure a few recipes inspired by it will appear before too long on here.

This current recipe however is from "River Cafe Easy" by Ruth Rogers. It is a recipe I have cooked before and enjoyed - it is very simple and straightforward, and definitely adds something to Pork Chops which if just grilled can be plain and tough. This keeps them moist and adds a sharp flavour which goes well wth pork. I served this with "potatoes with Lemon" which is another River Cafe recipe. Maybe too much lemon, but I like the thematic thing. And it actually worked. The potatoes were good and an interesting tang as well. and the sharp fresh flavour felt suitably spring-like to befit the feeling.

I liked it and will do it again. The 6 rating reflects a certain ambivalence from the Offspring who, once again I suspect of just being anti anything new... We will see.
