Syrup Broccoli Noodles

Ingredients

Sheet of dried noodles

handful of tenderstem broccoli

Sesame oil

1 garlic clove, crushed

Pinch of dried chilli flakes

1 tbsp golden syrup

1 tbsp light soy sauce

lime juice

Cook the noodles per packet instruction. Drain and toss in some sesame oil


While the noodles are cooking, pan-fry the broccoli over high heat in a little sesame oil. While you don't want to burn it, a little charring is good.

After a few minutes, add the garlic and chilli, fry for a minute then add the syrup, soy sauce, a tbsp of sesame oil a squeeze of lime juice, some cracked black pepper and a tbsp of the noodle water.

Simmer for a couple of minutes then add the drained noodles, toss it all together and serve

Method

Suspend your disbelief suggested by the name of this dish. It is truly simple and delicious, and vegan if you care.

This is one of a few dishes I will be adding here that come form a book called "vegan One Pound meals" by a man called Miguel Barclay. I cant remember how I came across him initially, probably instagram, but he is apparently a "thing". That is this book is in a series he has done on one pound meals in different genres. I am, as the Eldest informed me, just late to the party.

Anyway I liked what I saw on the post I stumbled on and decided to buy the book. Not cos I am going Vegan, but because I think anyone trying new things within a set of constraints (vegan AND low cost) may come up with some interesting ideas. And so he does. An added plus for me is that he sizes most of his recipes for 1 person and given I have 2 picky eaters in the house it opens the potential for me to cook something new for myself if they are otherwise engaged or, like this one, to try and encourage them tho try new things. I cooked this for myself and the youngest and e both loved it. I essentially doubled the ingredients which are, here given for ONE person - although it is one fairly greedy person.

Forgive the imprecise nature of the ingredients, I am following Miguel's example - but they are actually pretty usefull because you can adjust them for how hugry you are actually feeling.
